The Weight Loss Secret
The weight loss secret is in the chain -
the chain of molecules that make up the fat of coconut oil. These
shorter chain fatty acids in coconut oil are known as medium chain
triglycerides (MCTs). They burn up quickly in the body. They're a lot
like adding kindling to a fire, rather than a big damp log. That's the
secret to coconut oil's weight loss success!
MCTs from coconut are easily and
quickly converted into energy.
Thermogenesis is the rate at which the
body burns fuel for energy. A very unique quality of MCTs is their
ability to increase the rate at which the body burns fat for fuel. This
could account for the trim, healthy constitution of Pacific Islanders
who eat a diet high in traditional fats that are primarily composed of
MCTs.

"One of the most popular
epidemiological (population) studies was conducted in the South Pacific
islands of Pukapuka and Tokelau near New Zealand. The studies began in
the 1960s before either island was exposed to Western refined foods.
These populations ate only natural foods, and coconut foods were the
most prevalent, being consumed at each meal in one form or another.
"While most people in Western countries
get 30-40 percent of their calories from fat, these islanders averaged
between 50 and 60 percent of their calories from fat, most of that being
saturated fat from coconuts. The overall health of both groups of
islanders was extremely good compared to Western standards. There were
no signs of kidney disease or hypothyroidism that might influence fat
levels. There was no hypercholesterolemia (high blood cholesterol)
either. All inhabitants were lean and healthy despite a very high
saturated-fat diet. In fact, the populations as a whole had ideal
weight-to-height ratios as compared to the Body Mass Index figures used
by doctors and nutritionists. Digestive problems were rare. Constipation
was uncommon; they averaged two or more bowel movements a day.
Atherosclerosis, heart disease, colitis, colon cancer, haemorrhoids,
ulcers, diverticulosis, and appendicitis are conditions with which they
were unfamiliar."

Salmon Steaks with Vegetables
Serves 4
Do you dislike washing dishes? If yes, try
cooking food in one pot, pan or wok. Not only does this cut down on the
number of utensils used, but by combining protein and plant food in one
vessel, the flavour of all the foods are enhanced. Food actually tastes much
better cooked this way. This dish goes well with a crispy green salad.

medium Spanish onion, finely sliced
1
medium Spanish onion, coarsely sliced

cups yellow summer squash, sliced
1
large red pepper, coarsely sliced
4
tablespoons virgin coconut oil
4
salmon steaks
1/2
teaspoon turmeric
1/2
teaspoon coriander
1/2
teaspoon sea salt or Celtic salt
1
tablespoon fresh oregano or marjoram or 1/2 tablespoon dried
1
tablespoon fresh lime juice
-
Chop one onion finely, and the other very
coarsely, into about 1" squares. Slice the squash, and slice the peppers
very coarsely.
-
Heat the oil in a pan; use a wok, Dutch
oven, or other utensil with a good strong base. There should be little
bubbles forming on the bottom of the pan before adding the vegetables.

Add the onions and cook for about 10
minutes or until tender; then add the squash and the peppers.

Next add the turmeric, coriander and sea
salt.
-
Stir-fry for about 10 minutes, then push
the vegetables aside and put the salmon steaks in the centre of the pan.

Sear the underside for about 3 minutes and
turn them over. Arrange the vegetables on top of the salmon, add the
herbs and a sprinkling of lime or lemon and cover the pan or Dutch oven
with a well fitting lid.

Reduce the heat and cook for about 5
minutes.
Nutritionists note: We love
this recipe. When the yellow summer squash wasn't available, we substituted
it with half-inch pieces of orange coloured sweet potato, which was
fabulous! |

Low-Carb Coconut Smoothie
(serves 2)
1
cup Coconut Milk (recipe pg.218) or 1 x 13.5 ounce can coconut milk or 1 cup
Almond Milk (pg.219)
1-2
tablespoons protein powder
(goat protein, whey, or
rice protein)
1
tablespoon virgin coconut oil
1
tablespoon
ground flax seeds
1
teaspoon pure vanilla extract
1/4
teaspoon almond extract
1/4
teaspoon stevia powder
8-10 ice cubes
-
Place all ingredients but ice in a blender
and process at high speed until well combined.

Add ice after the coconut oil is blended
so that it won't clump. You may use more or less ice, depending on how
cold you like a smoothie.
Nutritionists note: We
substitute ordinary ground flax seed with sprouted flax seed powder, as the
sprouting makes them incredibly nutritious. You can get them
